Published by admin at August 20th, 2008Chicken is the most popular poultry for home cooking. Chicken is available all year round, either oven ready or frozen. Also it is available jointed either fresh, chilled or frozen. There are four types of chicken which we have found recipes for on this site.
Poussins: These are baby chickens that weigh between 350 and 500 grams. They are cooked quickly and one bird will serve one or two people.
Spring chickens: Somewhat larger than poussins, these chickens weigh 750g to 1.25kg. They are usually halved to serve and cooked for a short time only.
Roasters: Most chickens are sold as roasters, which start at around 1.5kg.
Boiling Chickens: Are a little older and have acquired more flavour. They are larger and take longer to cook, so they need to be checked frequently after the first 2 hours simmering and served as soon as they are tender. Boilers weigh from 1.5kg, but they can weigh a lot more.
